That should work just use a proper toggle for the power.... and as far as power needs the device should only use what it needs... so the 800 would be fine...

Is there any way I could measure the amperage that the mixer is using? Would a multimeter help?

Yes you should be able to with a decent Multi Meter (digital would probably be best for this)
One problem with the transformer you linked.... Its output is not DC... Its AC... Transformers are AC components and you would have to build a Rectifier circuit for it pretty much like the one I made for a halogen to LED desk lamp mod ( LINK to Gallery)... This is why I suggested the others which are already suited for DC application.

Crackedit open, and wired it up, I'm gonna make it secure though before I plug in. I need some larger heatshrink tubing.

okay, update. I stayed back 2 hours after school for 4 weeks, and have finished the enclosure!
Also, have the tubing, and have wired up the transformer. Its just really construction now

Gahhh, I'm so close to done, I can almost smell it! But I REALY Urgently need help wiring a master volume! Could someone please tell me either what value potentiometer to use, or how to find out. Could I find out with a multimeter? How?
Please help, it really is urgent now, I need to get this finished.
